1st layer
1 cups self raising flour
4 ozs butter (softly melted)
1 cup coconut
1 cup light brown sugar
Mix well until the mixture turns crumbly. Press into a long flat greased tin
(A lamington tray is ideal). Bake in a moderate oven (180 degrees) for 12-15 minutes.
2nd layer
1 tin condensed milk
2 tablespoons golden syrup
1 oz melted butter
1 tablespoon instant coffee
Remove from heat and add 2 ozs of chopped walnuts
Stir until ingredients are well combined and pour over the biscuit mixture.
Bake again in a moderate oven for 12-15 minutes.
3rd layer
1 packet chocolate melts (about 250g)
1 oz copha
Melt together and spread over the 2nd layer.
When the biscuit is cool and the chocolate is set cut into squares. |
