4 ozs plain flour
4 eggs
½ teaspoon cream of tartar
4 ozs sugar
1/4 teaspoon bic-carb. Soda
6 drops vanilla essence
Beat the egg whites until stiff, add the sugar a little at a time and beat until peaks form.
Add the egg yokes and vanilla essence and beat again until creamy.
Add the cream of tartar and carb soda to the flour and sift twice. Fold into the egg mixture
with a metal spoon and pour into 2 greased 8” sponge tins.
Bake about 12 minutes in a moderate oven 180 degrees. |
